TheVoiceOfJoyce New Mexico is now home to three roving food trucks, bringing upscale Pueblo indigenous comfort food to local markets all over New Mexico. The three chefs have trained with the best and though they lack the funding to have a brick and mortar cafe, they’re creating a need to eat healthier indigenous ingredients with a contemporary twist. When you read the menu off of Ray Naranjo’s truck, Manko, you want to try his cooking. Beautiful to look at and chock full of readily available ancient grains and spices, along withNew Mexico’s famous chilies. Look for their trucks cruising New Mexico, Manco, Over the Moon and soon, Yapopup! This is a beginning for them and their clientele. Everyone invested in the Indigenous peoples journey.
